Ancho Chipotle Chicken

We slow cook shredded chicken breast in warm spices, then add a thick ancho-chipotle sauce, fire-roasted poblano peppers, red onion and three-chili gouda cheese. Top this off with spicy cilantro pesto and serve it on an artisan-style ciabatta bread, and you’re ready to savor a taste of the southwest.
